Biology

Deep-water shrimp (Pandalus Borealis) thrive in cold water and occasionally disappear altogether from known shrimping fields in the south of Quebec, if the water temperature gets too high.

Shrimps start life as a male and then, sometime between the age of 2 1/2 and 4 years, they change sex and become female. Shrimp mate in the autumn and the female carries the eggs round in her abdomen throughout the winter.

Nutritional Value

Deep water prawns are sold boiled, hence the fine red colour. They are sold frozen or fresh. They are also sold as shelled, in brine or frozen. When fresh they are stiff and shiney and have a delicate smell of sea. If prawns with their shells on are not fresh, they become soggy you will know they are not fresh.

Deep water prawns are an excellent source of vitamens B12 and are rich in oil soluable vitamin A, E and D.
